It’s Navratri! As usual people were “concerned” about what I am going to eat for the next 9 to 10 nights. A Navratri fast seems restrictive on paper, but let’s face it I’d eat like this every day if there wasn’t the risk of diabetes and pancreatic cancer from the carbs! I mean, on night one I had bananas and yogurt and a bowl of shredded cheese. Last night I had bananas in yogurt blended with ricotta cheese plus a red pear and some red grapes. Tonight I’m going to have ghee soaked potatoes! C’mon – that’s AWESOME. The “fasting” is some of the best parts of Navratri – alongside the clarity and focus of some of the best meditations all year.

So join me tonight with this super fun super tasty slow cooked Ghee (clarified butter) soaked pot of potatoes!
YOU’LL NEED:
About 10 Red Potatoes, washed
Some Ghee
and a crockpot – THAT’s IT!
Start by slicing the potatoes into thin slices, like you would an apple:
While you’re doing this, start up the crockpot and put 2 tablespoons of ghee at the bottom. It’ll start to melt as you’re slicing potatoes.
One cutting board load at a time, slide the sliced potatoes into the your slow cooker .
You can add a pinch of edible rock salt here, if you have black salt even better! Pink salt might be ok too, just don’t use iodized table salt – well, because it’s Navratri and that would defeat the whole purpose.
Add another teaspoon of ghee on top and close the lid. (you can also optionally use a teaspoon of coconut oil instead of ghee on top if you feel like changing it up a bit).
Slow cook for 5 hours! It’ll be ready just in time for sundown!
