  1. Prepare the Milk: Pour the whole milk into a heavy-bottomed pan and heat it over medium heat until it reaches a gentle boil. Stir occasionally to prevent the milk from sticking to the bottom of the pan.
  2. Add Lemon Juice or Vinegar: Reduce the heat to low and add the lemon juice or white vinegar gradually while stirring the milk. Continue to stir until the milk curdles. You should see the whey (greenish water) separating from the curds.
  3. Strain the Curds: Once the curds have separated from the whey, turn off the heat and let it sit for a couple of minutes. Place Ellie’s Best Bigger Better Nut Milk Bag over a bowl or sink and pour the curdled milk through the bag to strain out the whey. The nut milk bag will catch the curds, leaving the whey behind.
  4. Rinse with Cold Water: Rinse the collected curds under cold running water to remove any traces of lemon juice or vinegar. This helps in maintaining the freshness of the paneer.
  5. Tie and Hang the Bag: Gather the corners of the nut milk bag and tie them together. Hang the bag over the sink or a bowl and let it drip for 15-20 minutes to remove excess whey.
  6. Press the Paneer: Transfer the paneer (still in the nut milk bag) onto a flat surface. Place a colander or sieve over a bowl to catch any remaining whey. Put a heavy object on top of the paneer to press it. This helps in shaping the paneer into a firm block. Allow it to press for at least 1-2 hours.
  7. Chill and Slice: Once pressed, refrigerate the paneer block for a few hours or overnight. This will help it firm up. After chilling, you can slice the paneer into cubes or any desired shape.
  8. Enjoy: Your homemade Mushroom Paneer is now ready to be used in various recipes. Use it in curries, stir-fries, or as a filling for wraps and sandwiches.
