I was so excited to see Pomelos in this hemisphere. I didn’t even know that was possible! It is one of my favorite fruits ever and I hadn’t experienced that taste since that time I spent in VietNam. I tried to get some Pomelo juice back then every chance I got. It was almost the only drink you could convince Asians not to add sugar too. It doesn’t need added sugar, but that doesn’t stop folks in VietNam from insisting you drink it extra sugary. Anne (some of you remember Anne) would have to constantly tell waiters in restaurants, in vietnamese on my behalf, to just bring me Plain Pomelo juice – I might have been the only one in the whole country that drank it this way. But it is AWESOME. It is SWEET on its own.
Flash to today, and I have Pomelos to eat!! In my own hands! But the question is often, WHAT DO I DO WITH THE SKIN? It is so thick and fluffy, and the only recipe so far online is some sort of braised pomelo pith. Meh, that sounds like a lot of work.
The Pith (the white part of the peel), actually holds a CRAZY AMOUNT of the health benefits. It might even be the primary prevention cure for cancer, I’m serious. I don’t know, but seems promising. It is SO healthy, it seems so foolish to throw it away. That and it makes up a substantial amount of the fruit itself. It has a very fluffy texture, as if the pomelo center is protected by cotton candy (well, it is not sweet – less bitter than grapefruit skin, but still – you probably wouldn’t want to eat it raw and straight).
So once again! This became an Air Fryer experiment, out of sheer curiosity. And guess what – an INSTANT success!
THE RESULTS? Imagine a Pita Chip, but more flakey/less dense. Yeah! It really is that Exactly. So what’s the RECIPE? READ ON BELOW!
You will need:
1 Pomelo
Olive Oil
Sea Salt/Kosher Salt
That’s it!
STEP 1. Peel your Pomelo. Set aside the fruit and focus on the peel.
STEP 2. Separate the green “skin” part from the white pith with a knife. Carefully. Don’t cut yourself.
STEP 3. Cut the white pith into chip size portions and place in the air fryer.
STEP 4. Generously add olive oil and toss.
STEP 5. Add salt and toss again.
STEP 6: Air Fry at 400 degrees for 7 minutes.
ENJOY!!!!
These chips are awesome, and great with hummus. The only catch is both the chips (as well as hummus) are very very very very very very very VERY high in fiber.
